These Mini Strawberry Shortcakes are super simple to make with just a few ingredients – including freeze-dried Strawberries! They are a delicious dessert that everyone will love.

Ingredients

  • 2-4 bags Brothers All Natural Freeze-Dried Strawberries (1 oz. bag size)
  • 2 tablespoons sugar
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed
  • 1 Large egg (room temperature)
  • 1/2 cup whole milk
  • Whipped Cream

Instructions

    Place freeze-dried strawberries in a bowl. Add water until strawberries are just covered and allow to rehydrate until strawberries are soft. If needed, drain excess water.

    In another bowl, combine flour, baking powder, salt and sugar. Cut in butter until crumbly. In a small bowl, beat egg and milk. Stir into flour mixture.

    Fill greased muffin cups about two-thirds full. Bake at 425 for about 12 minutes, until golden. Remove from pan and allow to cool completely.

    Once cooled, cut each shortcake in half horizontally. Spoon strawberries and whipped cream between the layers of the shortcake. Enjoy!
