These Mini Strawberry Shortcakes are super simple to make with just a few ingredients – including freeze-dried Strawberries! They are a delicious dessert that everyone will love.

- 1Place freeze-dried strawberries in a bowl. Add water until strawberries are just covered and allow to rehydrate until strawberries are soft. If needed, drain excess water.
- 2In another bowl, combine flour, baking powder, salt and sugar. Cut in butter until crumbly. In a small bowl, beat egg and milk. Stir into flour mixture.
- 3Fill greased muffin cups about two-thirds full. Bake at 425 for about 12 minutes, until golden. Remove from pan and allow to cool completely.
- 4Once cooled, cut each shortcake in half horizontally. Spoon strawberries and whipped cream between the layers of the shortcake. Enjoy!
