- 1To get the coconut cream, put the can of coconut milk into the refrigerator for a few hours, then scrape the heavy cream from the top - you should get at least 8 ounces.
- 2Add all the ingredients, except the strawberries, into a blender and mix well.
- 3Pour this mix into your ice cream maker and follow the instructions for your machine (generally around 20-25 minutes).
- 4Set aside just a few strawberries as a garnish, if you like.
- 5In a clean blender, blend freeze dried strawberries until fine.
- 6Add small amounts of water (1 Tbsp) at a time and blend until thick, jam-like consistency.
- 7Drop some of the strawberry swirl mix into the bottom of a parfait glass and swirl around the sides.
- 8Place ice cream into the glass, then drizzle swirl mix on top.
- 9Garnish with one of the strawberries you saved earlier and serve immediately!
