Peaches and summer just go together – but fresh peaches don’t last all that long! Consider this great peach sorbet made from freeze dried peaches. Freeze dried fruit stores well and tastes outstanding!

Ingredients

  • 1-1 1/2 cups Raw Honey
  • 1 cup Hot Water
  • 1 cup Coconut Milk
  • 4 bags Brothers All Natural Freeze Dried Peach
  • 1 zest Lemon (Take the juice from the lemon, too!)

Instructions

    Make a simple syrup by combining the honey with hot water.

    Stir until the honey completely dissolves.

    Allow this to cool.

    Combine peaches, coconut milk, honey mixture and lemon in blender or food processor, and process until smooth.

    Pour the peach puree onto a parchment-lined cookie sheet and freeze until set.

    Break the frozen puree into pieces and blend again in the food processor (you might have to do this in small batches, depending on your equipment).

    Pour back onto parchment lined cookie sheet and freeze again.

    Blend a final time.

    Serve immediately or pour into an ice cube tray to mold into squares and save in the freezer for up to a week. Consider a garnish of fresh mint leaves, if you wish.
