Get a taste of the tropics with these Mango white chocolate chip cookies! These cookies incorporate freeze-dried mango to boost flavor and create a deliciously soft, fruity cookie.

Ingredients

  • 1/2 cup butter at room temperature
  • 1/2 cup light brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon pure vanilla extract
  • 1 egg
  • 1 egg yolk
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1/2 cup crushed freeze-dried Mango (About 2 bags)

Instructions

    Using an electric mixer, cream butter, sugars, vanilla, egg, and egg yolk.

    In a separate bowl, whisk flour, baking soda, and salt.

    Slowly add dry ingredients to the wet ingredients while mixing.

    Add crushed freeze-dried mango and white chocolate chips. Place the bowl of dough in the fridge, covered, for 1 hour.

    Preheat the oven to 350°F. Line a baking sheet with parchment paper and place 1 inch balls of dough evenly on the baking sheet.

    Cook for 10 minutes. Remove from oven, let cool, then serve.
