Peaches and summer just go together – but fresh peaches don’t last all that long! Consider this great peach sorbet made from freeze dried peaches. Freeze dried fruit stores well and tastes outstanding!

- 1Make a simple syrup by combining the honey with hot water.
- 2Stir until the honey completely dissolves.
- 3Allow this to cool.
- 4Combine peaches, coconut milk, honey mixture and lemon in blender or food processor, and process until smooth.
- 5Pour the peach puree onto a parchment-lined cookie sheet and freeze until set.
- 6Break the frozen puree into pieces and blend again in the food processor (you might have to do this in small batches, depending on your equipment).
- 7Pour back onto parchment lined cookie sheet and freeze again.
- 8Blend a final time.
- 9Serve immediately or pour into an ice cube tray to mold into squares and save in the freezer for up to a week. Consider a garnish of fresh mint leaves, if you wish.
