- 1Preheat oven to 350 degrees F. Coat muffin pans with non-stick spray (or use paper liners). Sift together the flour, baking powder, baking soda, and salt. Set aside.
- 2Put bananas in a bowl and cover with water. Let bananas rehydrate until soft. Mash together.
- 3Combine bananas, sugar, egg, and melted in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.
- 4Bake large muffins for 25-30 minutes (If making mini muffins, reduce time to 10-15 minutes). When done, muffins will spring back when lightly tapped.
